Removing Users who Completed assignments by mistake

If a user has completed the course who wasn't supposed to and you get the prompt below..

You can remove him by these steps. 

1. Go to Admin Center---User Admin-- And search for the user.

One you have the user you will see his activities, assignments, or courses below.

Click on the triple dots for options for the assignment (for this example).

This will open up the option box. You will Re-Open the assignment. After you reopen the assignment (for the user), you can Delete from this page. Which will remove the user.
